Introduce the unit operations applied in food engineering field by explaining with the principles of engineering, provide information about the industrial machines used in these operations

Course Contents
Applications of preliminary operations: cleaning, sorting, grading of raw materials. Size reduction, screening, agitation, emulsification, filtration, settling and sedimentation, centrifugal separation processes. Equilibrium relations between phases, absorption, distillation, extraction, leaching, crystallization, adsorption. Membrane separation processes

2Size reduction, energy and power required in size reduction, size reduction equipments in food industry, screening and sieve analysis
3Agitation, heat transfer in agitated vessels and power required
4Filtration, types of filtration equipments used in food industry, filtration theory
5Settling and sedimentation, centrifugal separation processes: centrifugal settling or sedimentation, centrifugal filtration, cyclone separators
6Gas-liquid separation processes: Equilibrium relations between phases, single and multiple equilibrium contact stages, mass transfer between phases
